Chocolate Cake with Berries and Dark Chocolate Covering
We cheated a little bit on this one. We used a boxed cake mix to make our chocolate cake. *Gasp* But we covered it with an incredible chocolate ganache and berries and some nonpareils for decorations.
1 boxed cake mix
1 cup cut strawberries
1/2 cup raspberries
1/2 cup blueberries
2 bags of Guittard dark chocolate
1 cup heavy cream
1 tsp Madagascar Bourbon Vanilla Extract
Rinse berries and pat dry, set aside. Follow directions for the cake mix but add the berries to the mix before baking. Bake for a few extra minutes, testing with a fork to see when it is done. Cool the cake on a wire rack, over a large piece of wax paper.
Cake covering: In a microwave bowl melt dark chocolate in 30 second intervals. Add lukewarm heavy cream. Stir until smooth; mix in vanilla extract. Cool slightly. Poor over cake letting the chocolate covering cover the entire cake, letting the excess drip through the wire rack and onto the wax paper. Make sure and cover the entire cake. While still wet, add nonpareils. Place in refrigerator for 20 minutes.
